Chopped Italian Parsley

Crushed Tomatoes 28 oz can
4 cup
Vegetable Broth
2 TBSP
Vermouth
1 tsp
Fennel Seeds
1 diced
Fennel Bulb (large)

Vegan Sausage and Tomato Stew Recipe

The is soup is high protein and very tasty.  This is one of my goto favorites for a hearty fulfulling quick meal.

  1. On medium heat, heat the oil in a soup pot. Add the fennel and saute for 3 minutes.
  2. Add sausage and cook 7 minutes of until the fennel seeds are softened and sausage begins to stick to pan.
  3. Add the vermouth and cook 10 second to deglaze the pan, scraping up brown bits.
  4. Add broth, tomatoes and parsley. Cover and bring to a boil. Reduce the temperature to medium-low and simmer for 10 minutes.
  5. Season with salt and pepper if desired. Enjoy!
